It’s a Tuesday, and kind of a boring one at that. There’s nothing really to update. Hayes’ best friend came down this weekend. We went to a white trash party on Friday night. I worked Saturday. Sunday, we cooked dinner, then got upset because Hayes’ ex-girlfriend called him. He didn’t want to be rude to her, but in the process, it hurt my feelings. When my feelings get hurt, I usually get kind of pissed off.

Work. School. Boyfriend. That’s all my world revolves around. Do I mind that much though? I`m working on my SOP for my grad school application. It’s slowly coming along. Right now, I have no idea how I`m going to pay for grad school, or even pay for an apartment. The last time I got money from my mom was when she was paying me back money that I had loaned her. Being at this awkward stage of poor, yet not poor enough for government assistance, sucks.

I’m trying to be a more thorough cook – that is, making a side dish to go along with the main dish in order to have an entire meal. Sometimes, that just consists of a roll. Other times, I actually go out of my way to make something.

Lemon & Garlic Broccoli

1 bag frozen or fresh broccoli florets (I used one of those frozen broccoli steamer packets)
2 tbsp. oil
1 tbsp. lemon juice
1 tsp. garlic, minced
Salt
Pepper

Steam florets, as directions state. Combine oil, lemon juice, garlic, salt & pepper in a bowl. Pour over cooked broccoli. ‘Stir Fry’ on high heat for about 2 minutes, serve.

I was looking for something simple to eat, which is how this developed. The boyfriend and I were hungry, so for dinner, we really decided to have breakfast. He fixed scramble eggs, and I fixed these (only half the batch). They were so good that we ended up fixing the rest not more than 30 minutes later. They are extremely hot when they first come out of the oven, so be careful. The key is to really oil them, so they don’t stick so much.

Garlic Roasted Potatoes

2 lb white creamers (any potatoes really, just cubed)
1/4 cup vegetable oil
1 (1 oz.) packet Hidden Valley Ranch Dressing (Seasoning & Salad Mix)
1 Tsp. minced garlic

Preheat oven to 450. Place cubed potatoes in a plastic bag, add the oil, toss to coat, add dressing packet and garlic. Bake in a pan 35 minutes or until crisp.
