I love going to the Farmer’s Market. Who wouldn’t? The smells of produce, the freshness of everything, the cheapness of everything, the localness of everything, it’s heaven! Yesterday, my two roommates and I made the trip down to the NC Farmer’s Market (all of a 10 minute drive). I only took a few pictures because I was so concered with trying all the free samples. I had pound cake, rum cake, so many kinds of salsas, tomatoes, grapes, grape jelly, grape slushi, yum yum!

I only bought a few things ($20 worth of things), just because I really didn’t need anything else! I bought a freshly baked loaf of Sourdough Bread, a jar of Apple Butter, two cucumbers (it`ll probably be the last time for fresh cucs), two German Johnson tomatoes, and two turnovers – Apple and Blueberry.

For supper that night, after I got back from my run (I ran just to time how fast I could do a mile. Right now, I`m about at 13 minutes), I knew I had to fix something with my fresh ingredients. So I make a tomato and mozzarella panini. I used my fresh Sourdough bread, the German Johnson tomato (a few slices, because they were HUGE), and some of my roommate’s mozarella. It was good, but the mozarella was store bought, and a little blah. I might add some pesto tonight, just to add some flavor.

For breakfast today, I had two lightly toasted pieces of Sourdough bread topped with the amazing Apple Butter and some Almond Butter (store bought). My snack, at work, will be some Chobani yogurt with chocolate chip granola. Hopefully it`ll get me through the day. I have to work 1-5 today but then I get to come home and run! If I don’t run, I start to feel a bit antsy. In fact, I always can’t wait to be done with work so I can run! I love this feeling.

Good morning! I did end up making the Frozen Yogurt last night. I mixed together 1 cup Fage Whole Fat yogurt, 1/4 cup sugar and a splash of Vanilla Extract. I stuck that in the fridge for an hour, then dumped it into my ice cream maker. Man, was it good! It tasted just like Pinkberry, especially when I added some Chocolate Chip Granola and some PB Puffins on top. Yum yum.

I did a few exercises before bed, mainly some bicep extensions with my resistance band, some sit-ups and a few push ups. Oh! And some jumping jacks, I haven’t done those in years! I hope that I annoyed the neighbor downstairs because he always thinks that I need to hear his crappy taste in music through the walls.
I had two frozen Van’s Homestyle Waffles this morning, topped with some berries and agave nectar. Basically you just mix frozen berries and some agave nectar in a bowl, microwave for 90 seconds. It was amazing. Perfect thing to start my morning off. I did take a picture, but I was really ready to eat, so they all came out super blurry. I also forget to weigh myself before I ate, but I`ll just do that tomorrow morning to make up for it.
I went on a fixed lunch. It was basically the leftover panko crusted Tilapia from last night, rolled up with some lemon juice, spinach, tomatoes, mozzarella cheese, all in a whole wheat tortilla. I hope it’s good. I tossed in a ginger snap Lara Bar that I picked up from Whole Foods yesterday. Working 8-hour shifts makes me eager for a snack!

That`s all for this morning! I got to go get dressed for remember. Tonight is a run night, so I need to make sure I get plenty of water. Enjoy your Thursday!
My eye doctor appointment went good. My eyes are the same as they were last year, so I can’t complain. After my appointment, I headed over to Whole Foods to grab some stuff for supper tonight.
Sorry for the bad lighting, maybe I should eat earlier. But for supper I had Panko Crusted Tilapia baked in the oven with roasted asparagus, and a spinach, tomato and basil salad with Italian dressing. For the tilapia, I dipped it in a flour/lemon pepper seasoning, then dipped in egg, then dipped it in the Panko. I cooked it and the asparagus in the oven at 375* until the fish flaked. It was my first time cooking fish on my own, and adding lemon juice when I ate it took it to a whole different level.

I ran to the mailbox right after dinner, and SURPRISE! I had a package! A few days ago, I had won an Operation Beautiful necklace from Healthy Tipping Point and it had arrived! A generous reader of Caitlin’s blog had purchases the necklace with the intention of allowing Cailtin to give it away. Such a generous guesture. Check out the creator’s esty account here. I plan on giving it to my mom because she is having a hard time right now. She’s been trying to loose weight for a while, but it’s just not coming off, I think due to the stress and not eating the correct foods. But I`m trying to change that!

I tried to kill two birds with one stone and take a picture of my necklace and dessert (Whole Foods Chocolate Cheesecake). I only ate about 1/2 the cheesecake, it was a bit dry to me. I have my ice cream maker in the freezer, so I might try out this recipe for a Pinkberry-style frozen yogurt! I found this website which had Yoga for Runners, so I think that`ll be my exercise for today!
