I decided to go ahead and make some of the dishes for the Superbowl today while I had the time. Both the magic cookie bars and the shrimp dip would taste even better after letting them sit.

The magic cookie bars are from a box mix, the Eagle Brand one to be exact. I’ve been eyeballing it for years, but finally had a reason to snatch it up. Even though I’m not that much of a butterscotch fan, these are some of the best things I have ever put my mouth on.

Then I fixed shrimp dip, which is my absolute favorite party good. It’s not fattening at all, and even more so this time because I picked up reduced fat cream cheese.
So what all is on our menu?
- Shrimp Dip w/ Wheat Thin (my special request)
- Magic Cookie Bars
- Oreos
- Beer (not sure what kind, the boyfriend is in charge of that)
- Pigs in a blanket
- Velveeta, rotel & hamburger dip with chips (the boy’s request)
Who do I think is going to win? Well, I’m not really a hardcore fan, but I do like New Orleans, so I’m going with the Saints!!
I watched the Super Bowl this year. Not just for the commercials either (which weren’t that great). I actually paid attention to the game. Though I was rooting for whoever the underdog was, the last quarter was thrilling!
Spinach Dip
1 Package Green Giant Frozen Spinach
1 Jar Tostitos Salsa con Queso Dip (or your favorite of any brand)
1 Package Cream Cheese, cubed.
Prepare the spinach per directions on the back of the box. Drain the spinach (the drier, the better). Over a medium-low heat, combine the salsa and cream cheese, along with the spinach. Stir until everything is combined (10 or so minutes). Place into a serving bowl, grab a bag of chips, and devour!
